Jarrah honey

Jarrah honey is produced from the Western Australian Eucalyptus marginata. It is characterised by exceptionally high hydrogen-peroxide-based antibacterial activity and an unusually low glucose-to-fructose ratio.

Activity profile

TA — high hydrogen peroxide, low GI

Activity is reported using Total Activity (TA) values measured by phenol-equivalent assay. Low GI and dark colour reflect a high polyphenol content.
